Food On The Move

After watching the show on Food Network called “The Great Food Truck Race” I suddenly became even more excited about the idea of serving gourmet and delicious foods from a truck.  Certainly I have eaten at my fair share of food trucks.  Some of my favorite Mexican food comes from a food truck, in fact.  But I am more infatuated with these rambling food masters than I have ever been.  If you have not seen the show, then I highly recommend it.  Numerous food trucks travel and compete to see which can sell the most food to win it all.  It is really fun to watch.

I could not be more excited about fall.  I’m not so sure why it is more exciting this year than previous years, but it is.  When I was growing up the fall meant back to school, pumpkins, and the state fair.  You see down in the south the fairs have to be held in the fall otherwise it would be way too hot for the people and the animals.

For those of you who do not yet know me all that well, just know this, I love breakfast.  This is no normal love.  Seriously, I wake up to a growling stomach each morning.  After I am pretty much awake, the cravings start.  Each day the cravings are different.  Some mornings I could go for a bowl of oatmeal, other mornings I want a biscuit, but unfortunately I am usually stuck munching on dry cereal while driving to get to work in a hurry.  This means that about one weekend a month I splurge.

Okay, maybe not all of us scream for bacon, but on occasion I just might.  I have fond memories of my childhood and in most of them bacon was present.  I’m not joking.  For instance, Christmas mornings we would trek to my great grandparents house at seven in the morning to eat with all of the family and bacon is a big part of breakfast in my family.  Another memory would have to be those Saturday mornings when the smell of bacon wafting into my bedroom was my alarm clock.  I would stumble out of bed and drag my feet to the kitchen to see a breakfast feast fit for a king in front of me.

Now, don’t laugh, but as a former vegetarian, I have days where I feel bad about even considering eating meat.  I’m not sure as to why, but a guilt comes over me.  With that said, I have been trying to go back to meat-free meals, but it proves to be pretty difficult when I have to not only cook for myself, but for my meat loving hubby too.  I have been seeing recipes recently where squash replaces lasagna noodle in lasagna, and I thought this would be a great way to get in some more veggies and cook a meat free dinner.  My no meat, no noodle squash lasagna was delicious.  Now, my husband was a little bit disappointed, and next time I know not to tell him that we are having lasagna for dinner.  He expected serious fattening and meaty lasagna like his Italian trained cook of a mother makes.  He ate it though, and I think he enjoyed it as mush as I did.  So, here’s the recipe for my vegetarian no-noodle squash lasagna:
